THỰC TRẠNG Ô NHIỄM MỘT SỐ TÁC NHÂN VI SINH VẬT TRONG SỮA VÀ SẢN PHẨM TỪ SỮA CHO TRẺ EM <36 THÁNG TUỔI TẠI VIỆT NAM 2019-2021

Tóm tắt

Mục tiêu: Xác định mức độ ô nhiễm một số tác nhân vi sinh vật trong sữa, sản phẩm từ sữa cho trẻ
dưới 36 tháng, năm 2019-2021.
Đối tượng và phương pháp: Nghiên cứu mô tả cắt ngang, lấy mẫu và xét nghiệm 4 chỉ tiêu vi sinh
vật thường gặp của 1.500 mẫu sữa, sản phẩm từ sữa cho trẻ dưới 36 tháng đang lưu hành tại 6 tỉnh/
thành phố lớn. Kết quả được đối chiếu với Quyết định số 46/2007/QĐ-BYT, ngày 19/12/2007 của
Bộ trưởng Bộ Y tế.
Kết quả: Sữa, sản phẩm từ sữa cho trẻ dưới 36 tháng tuổi có nguy cơ ô nhiễm vi sinh vật nhiều nhất
là các chất béo từ sữa. Vi sinh vật bị nhiễm nhiều nhất là Listeria monocytogenes. E.coli: 13,33%
mẫu Cream dạng lỏng; 11,11% mẫu bơ vượt ngưỡng giới hạn. Staphylococus aureus: 12,22% mẫu
Cream bột; 5,00% mẫu sữa bột gầy vượt ngưỡng giới hạn cho phép Salmonella: 6,33% mẫu phomat,
8,33% mẫu Cream dạng lỏng; 8,88% mẫu bơ, 7,77% mẫu chất béo vượt ngưỡng giới hạn cho phép.
Listeria monocytogenes: 5,00% mẫu Whey bột, 5,00% mẫu sữa cô đặc, 3,67% mẫu phomat, 6,67%
mẫu bơ, 10,00% mẫu chất béo và 6,00% mẫu sản phẩm sữa lên men vượt ngưỡng giới hạn cho phép.
Kết luận: Tình trạng ô nhiễm E.coli, Staphylococus aureus, Salmonella và Listeria monocytogenes
vẫn còn xảy ra ở một số loại sữa và sản phẩm từ sữa dành cho trẻ em dưới 36 tháng tuổi, gây nguy
cơ ngộ độc thực phẩm đối với trẻ em.
